Background
Galatea is a central figure in the Greek myth of Pygmalion, the king of Cyprus and a master sculptor. Unmarried and dissatisfied with the women in his country, Pygmalion sculpted his own ideal woman from ivory and fell in love with his creation. He clothed the statue in finery and jewels, embraced it, and even kissed it as if it were his lover.
In time, Pygmalion came to wish his sculpture was in fact a real woman. Aphrodite, who either watched all of this as it unfolded or simply heard Pygmalion's prayers, granted his wish and breathed life into the sculpture. Transformed into a living human woman, the sculpture and Pygmalion married, and it is said she even bore him a child...

There is no doubt that she was born from King Pygmalion's love of statues. His love was so intense, it was borderline madness, and enough for a god to grant him his wish.
As someone born from the king's fervent love (madness) and who had spent her life with Pygmalion, it was only natural and inevitable for Galatea to bear love (madness) herself.
And thus, Galatea became a Berserker upon her summoning.
"I was born from King Pygmalion's love, and am the one who conveys that love. May everyone find true love as well..."

A skill that demonstrates Galatea birth from Pygmalion's pure love. That love is the fundamental reason for her existence and it has taken root in her heart like a warm emotion. It will never be forgotten.
This also includes the skills she acquired during her happy days spent with King Pygmalion, such as domestic chores and any sculpting skills she learned from the king himself.

A skill that indicates that Galatea was an ivory statue come to life.
As a Servant, her spiritual body includes the characteristics of an inorganic object, due to the fact that the Mystics from her myth were those of a sculpture brought to life.
In effect, she is both human and a sculpture.
Even if her body breaks, she would be restored if she were to be glued back together. She can become harder than a regular Servant if she is ready and braces herself. She is also able to change at will the ratio of her human or statue states to be 100% one or the other.

The King's Chisel That Carves the Ideal.
A materialization of the chisel, wielded by the extraordinary sculptor King Pygmalion, that demonstrated superhuman feats.
Galatea the Servant, born of this chisel and wife of the king, possesses this as her Noble Phantasm.
The ivory sculpture of the maiden he sculpted was already extremely lifelike. It was a product so extraordinary that all who beheld the sculpture believed it alive, the creator himself fell in love with it, and even a god deemed it worthy of the breath of life. It was this chisel that produced a sculpture that was beyond human wisdom.
This Noble Phantasm is imbued with Aphrodite's blessing, and anything that gets carved out will begin to move, recreating the legend of Pygmalion. If the carving be a bird, it would fly into the sky; a snake would slither on the floor, its tongue moving about; a rose would bloom amidst a wreath of thorns. All of these objects become both a statue and a life form, just like Galatea (as far as its color and texture).
However, the objects do not live forever, and will turn back into intricate sculptures when Galatea runs out of magical energy. Also to note: humans cannot be created into life, no matter how intricately carved. Galatea believes that this probably happens because there is not enough love toward said object, and in turn, her respect towards King Pygmalion who managed such a feat, intensifies.

It was the goddess Aphrodite who imbued life to the sculpture and made Galatea human.
Where did this life come from?
Actually, it was essentially Aphrodite herself.
Though it was not the goddess's body or the goddess herself, it was a fraction of her essence that was separated and used as the requisite material to form this life form's core.
Even so, it was from divinity.
A discerning eye would be quick to realize that the very foundation of Galatea's existence is inexorably Aphrodite. The powers Galatea uses during battle originates from Aphrodite's divinity, but Galatea is not aware that her lineage can be traced back to Aphrodite, and she only thinks of Aphrodite as a goddess who still gives her protection.
Galatea considers Aphrodite a goddess she's greatly indebted to, and as a wonderful goddess of love who continues to offer her blessing even now.
Why would Aphrodite, who thrives from uninhibited love, do something like this in the first place? It's not entirely clear, but Aphrodite is said to have two epithets: Pandemos, the aggressive part of her that rules mortality, and Urania, the side that rules pure love. It is assumed that the latter aspect was affected by King Pygmalion's earnest love which led to these actions being taken.
